Sweet & Hearty Salsa


Makes 6-8 servings



1 1/2 cups cooked black beans (or 1 can [15 oz], drained and rinsed)

1 cup corn kernels*

1/2 mango, diced

1/4 cup red onion

1 (14.4-ounce) can fire-roasted diced tomatoes, with juice

2 garlic cloves, minced

1/4 cup packed fresh cilantro, chopped

3 tablespoons fresh lime juice

2 tablespoons extra virgin olive oil

1 teaspoon ground cumin

1 teaspoon minced canned chipotles in adobo sauce

1/2 teaspoon salt

2 avocados, diced

Tortilla chips*


  • Combine all ingredients, adjusting seasoning to your taste, then stir in avocado chunks last.

  • Can be served at room temperature or chilled for a couple of hours

  • This salsa is even better the second day, after all the flavors have time to meld together!

  • Stores in airtight bowl 3-5 days in refrigerator

*While all ingredients are best if organic, it's especially important to choose organic corn and tortilla chips, as the conventional type is genetically modified and coated in pesticides, potentially causing digestive issues and inflammation.
