Sweet Potato Soufflé Smoothie

 

Makes One Serving

 

1 cup peeled cubed sweet potato

1/2 cup almond milk

1/4 cup walnuts (best if soaked)

2 tablespoons raisins

1 tablespoon coconut sugar

1 teaspoon cinnamon

1/2 teaspoon vanilla extract

8 ice cubes

Can use maple syrup or raw dates to sweeten

 

Blend all ingredients in a high powered blender for one minute or until smooth.

Enjoy!

 

Carrot Cake Smoothie

 

Makes One Serving

 

1 large carrot

1/2 cup almond milk

1/4 cup cashews (best if soaked)

2 tablespoons shredded unsweetened coconut

2 tablespoons raisins

1 teaspoon cinnamon

Dash of allspice or nutmeg

1/2 teaspoon vanilla extract

1/2 teaspoon lemon juice

8 ice cubes

Can use maple syrup or raw dates to sweeten

 

Blend all ingredients in a high powered blender for one minute or until smooth.

Enjoy!

 

As always, it's best to use organic, local produce.  If using organic, you'll get more health benefits by not peeling the potato or carrot.  That part of the vegetable is full of nutrients and antioxidants.
