Cool As A Cucumber Mint Salad


Makes 4-6 servings



2 large cucumbers, thinly sliced (can be peeled if desired)

1/4 cup red onions, finely chopped

1/4 cup fresh mint, chopped

apple cider vinegar to taste

extra virgin olive oil to taste

sea salt to taste

black pepper to taste


  • Combine all ingredients to your taste, cover and chill for 30 minutes to 1 hour.

  • Stir again, serve, and enjoy!

  • Stores in airtight bowl 1-2 days in refrigerator
