Cool As A Cucumber Mint Salad
Makes 4-6 servings
2 large cucumbers, thinly sliced (can be peeled if desired)
1/4 cup red onions, finely chopped
1/4 cup fresh mint, chopped
apple cider vinegar to taste
extra virgin olive oil to taste
sea salt to taste
black pepper to taste
Combine all ingredients to your taste, cover and chill for 30 minutes to 1 hour.
Stir again, serve, and enjoy!
Stores in airtight bowl 1-2 days in refrigerator
